  • 2 medium butternut squash
  • 2 cups cooked chicken, shredded
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1/2 tsp ground cinnamon
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and black pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped walnuts or pecans, optional
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Halve the butternut squash lengthwise and brush with olive oil. Drizzle honey and sprinkle cinnamon, salt, and pepper.
  3. Place cut side down on a baking sheet and roast for 30-40 minutes until tender.
  4. In a mixing bowl, combine warmed shredded chicken with chicken broth, Parmesan cheese, onion, garlic, thyme, rosemary, salt, and pepper.
  5. Scoop some flesh from each roasted squash half and mix it into your chicken filling.
  6. Fill each butternut squash half generously with the mixture and return to the oven for an additional 15 minutes.
  7. Serve garnished with fresh parsley and an extra drizzle of honey.
