This stuffed avocado with chicken salad is a creamy, fresh, and satisfying dish perfect for a light lunch or healthy dinner. Ripe avocados are filled with a flavorful chicken salad made with tender chicken, crisp vegetables, and a tangy dressing. It’s a low-carb, protein-rich meal that’s both nutritious and delicious.
For the Chicken Salad:
2 cups cooked chicken breast, shredded or diced
1/4 cup mayonnaise
1 tablespoon Greek yogurt (optional, for extra creaminess)
1 tablespoon lemon juice
1/4 cup celery, finely diced
1/4 cup red onion, finely chopped
2 tablespoons fresh parsley, chopped
Salt and black pepper, to taste
For the Avocados:
2 large ripe avocados, halved and pitted
1 tablespoon lemon or lime juice
Optional Toppings:
Cherry tomatoes, halved
Paprika or chili flakes
Extra chopped parsley
In a medium bowl, combine the cooked chicken, mayonnaise, Greek yogurt, lemon juice, celery, red onion, and parsley. Mix until well combined.
Season the chicken salad with salt and black pepper to taste.
Cut the avocados in half and remove the pits. Lightly drizzle the avocado halves with lemon or lime juice to prevent browning.
