  • 1 head red romaine lettuce
  • 2 cups mixed greens
  • 1 pint strawberries (sliced)
  • 1 cup tomato-basil feta cheese (crumbled)
  • 1 cup pecans (chopped)
  • 6 whole strawberries (remove caps)
  • 1/4 cup tomato-basil feta cheese
  • 1/4 cup pecans
  • 1/4 cup olive oil
  • 1 Tbsp. apple cider vinegar
  • 2 Tbsp. sugar
  • 1/2 tsp. dried basil
  • 1/4 tsp. salt

Instructions

  1. Wash and dry the red romaine lettuce and mixed greens using a salad spinner.
  2. Slice the strawberries and set aside a few whole ones for garnish.
  3. In a large mixing bowl, combine sliced strawberries, greens, crumbled feta cheese, and chopped pecans.
  4. In a small bowl or jar, whisk together olive oil, apple cider vinegar, sugar, dried basil, and salt until combined.
  5. Pour dressing over the salad mixture and toss gently to combine.
  6. Garnish with remaining whole strawberries, additional feta cheese (if desired), and chopped pecans before serving. Enjoy!
