  • 1 tsp pure vanilla extract
  • 2 large eggs (room temperature)
  • ⅓ cup sour cream
  • 1½ cups all-purpose flour
  • 1½ tsp baking powder
  • ¼ tsp salt
  • ⅓ cup milk
  • 3 cups chopped fresh strawberries
  • 1½ tbsp all-purpose flour (for strawberries)
  • 1 tbsp granulated sugar (for strawberries)

Instructions

  1. Preheat your oven to 350°F. Line an 8×8-inch metal baking pan with parchment paper.
  2. In a medium bowl, mix together flour, sugars, and salt (if using unsalted butter). Stir in melted butter until combined and form large crumbs; set aside.
  3. In another bowl, whisk melted butter, sugar, and vanilla until fluffy. Add eggs one at a time, then mix in sour cream.
  4. Sift together flour, baking powder, and salt; fold into wet ingredients gradually adding milk until combined. Spread batter evenly in prepared pan.
  5. Toss strawberries with flour and sugar; scatter over the batter and top with crumb mixture.
  6. Bake for 40–50 minutes until golden brown and firm to the touch. Let cool before serving.
