  • 1 cup powdered sugar
  • 1 cup finely chopped fresh strawberries
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 2 cups white chocolate chips or candy melts

Instructions

  1. In a mixing bowl, beat together cream cheese, powdered sugar, strawberries, vanilla extract, and lemon juice until smooth. Chill for 30-45 minutes.
  2. Combine graham cracker crumbs, melted butter, and sugar in another bowl. Press this mixture into the bottom of each egg mold.
  3. Spoon the chilled cheesecake mixture on top of the crumb base in each mold, smoothing the tops.
  4. Freeze for 2-3 hours until firm.
  5. Melt white chocolate chips in a microwave-safe bowl and coat each frozen cheesecake egg. Decorate with sprinkles immediately after coating.
  6. Allow the coated eggs to set at room temperature for about 20 minutes before serving.
