  • 4 salmon fillets (56 ounces)
  • 2 small sweet potatoes, cut into rounds
  • 1 yellow onion, sliced
  • 1 red or orange bell pepper, sliced
  • 1 jalapeño, seeded
  • 1/2 cup plain Greek yogurt (or olive oil mayo)
  • Juice of 2 limes
  • Fresh cilantro, roughly chopped
  • 6 tablespoons extra virgin olive oil
  • Kosher salt and black pepper, for seasoning
  • 2 teaspoons chipotle chili powder
  • 2 teaspoons smoked paprika
  • 24 cloves garlic, minced or grated, to taste
  • 23 cups kale, spinach or arugula, roughly torn
  • 23 cups cooked quinoa or brown rice
  • Avocado, tortilla chips, feta cheese, for serving
  • 2 teaspoons honey

Instructions

  1. Preheat oven to 425°F.
  2. On a rimmed baking sheet, toss sweet potatoes, onion, bell peppers, and jalapeño with 3 tablespoons olive oil; season with salt and pepper. Roast for 20 minutes.
  3. While vegetables roast, rub salmon fillets with chipotle chili powder, smoked paprika, minced garlic, and remaining olive oil. Season with salt.
  4. Push roasted vegetables to one side of the pan and place seasoned salmon on the other side. Roast for an additional 10-20 minutes until salmon is cooked through.
  5. In a blender, combine Greek yogurt, roasted jalapeño, lime juice, honey, cilantro; blend until smooth.
  6. Serve salmon and vegetables over greens or grains and drizzle generously with the special sauce.
