  • 1 (3.4 oz) box instant pistachio pudding mix
  • 6 tablespoons cold unsalted butter, diced
  • 1/4 teaspoon vanilla extract
  • 1 large egg
  • Chocolate chips or chopped chocolate (up to 1/2 cup)
  • 2/3 cup heavy cream
  • Coarse sugar for sprinkling

Instructions

  1. Preheat the oven to 425°F (or adjust to 400°F if necessary). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, sugar, baking powder, salt, and pistachio pudding mix.
  3. Incorporate the cold diced butter until the mixture is crumbly.
  4. Add vanilla extract, egg, and half of the heavy cream; stir until combined, adding more cream as needed to form a dough.
  5. Divide the dough in half and shape each half into rectangles with added chocolate chunks.
  6. Cut each rectangle into triangles and place on the baking sheet. Brush tops with cream and sprinkle with coarse sugar.
  7. Bake for 13–15 minutes until golden brown.
