  • 115 g unsalted butter (melted and cooled)
  • 100 g brown sugar
  • 50 g granulated sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 100 g semi-sweet or dark chocolate (roughly chopped)
  • 50 g unsalted pistachios (shelled and roughly chopped)
  • Flaky salt (for sprinkling)

Instructions

  1. Freeze the pistachio cream spread in a thick layer on parchment paper for at least one hour until solid.
  2. Mix flour, cornstarch, baking powder, baking soda, and salt in a bowl.
  3. In a separate bowl, whisk melted butter with brown and granulated sugar until combined. Add egg and vanilla; mix until smooth.
  4. Gradually combine the dry ingredients with the wet mixture; fold in chopped chocolate and pistachios gently.
  5. Portion the dough using a cookie scoop and chill for an hour.
  6. Preheat oven to 350°F (175°C). Shape dough into discs, place frozen pistachio cream in the center, and seal.
