  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey
  • 1 tablespoon sriracha sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 2 cups jasmine rice
  • 4 cups water
  • Fresh cilantro for garnish

Instructions

  1. Gather and prepare all ingredients: chop the chicken, slice the bell peppers and onion, mince the garlic, and grate the ginger.
  2. Rinse jasmine rice under cold water until clear. Cook rice in a rice cooker or pot with 4 cups of water until fluffy (about 15 minutes).
  3. In a large skillet over medium heat, add olive oil. Once hot, season chicken with salt and pepper and cook until browned (5–7 minutes).
  4. Add onion, garlic, ginger, red and yellow bell peppers to skillet; sauté until tender (about 5 minutes).
  5. Stir in pineapple chunks and mix soy sauce, honey, and sriracha in a bowl before pouring over chicken mixture.
  6. Serve over fluffy jasmine rice and garnish with fresh cilantro.
