  • 1 cup water
  • 1 cup white vinegar
  • 1 cup apple cider vinegar
  • 3 tablespoons honey
  • 2 teaspoons kosher salt
  • 1 teaspoon whole black pepper
  • ½ teaspoon fennel seed
  • 1 Fresno pepper (de-seeded and finely chopped)

Instructions

  1. Prepare your mason jars by adding a pinch of whole black pepper, fennel seed, and chopped Fresno pepper at the bottom of each jar.
  2. Cut the celery into uniform sticks or dice.
  3. In a small saucepan, combine water, white vinegar, apple cider vinegar, honey, and kosher salt. Bring to a gentle boil over low heat until dissolved.
  4. Pour the hot brine over the cut celery in each jar, ensuring all pieces are submerged.
  5. Allow the jars to cool to room temperature before sealing tightly and refrigerating.
