  • 1 cup glutinous rice flour (mochiko)
  • ¼ cup granulated sugar
  • ¾ cup water
  • Pinch of salt
  • 8 small-to-medium fresh strawberries (hulled and dry)
  • 1 cup sweet red bean paste or vanilla cream (whipped cream with powdered sugar + vanilla)
  • 2 Tbsp cream cheese (for a tangy vanilla filling)
  • ½ cup potato starch or cornstarch (for dusting)
  • ½ tsp matcha powder (for color + earthy note)
  • 1 Tbsp freeze-dried strawberry powder (for berry aroma)

Instructions

  1. Wash and hull the strawberries, then dry thoroughly.
  2. Coat each strawberry in red bean paste or whipped vanilla cream and chill briefly to firm up.
  3. Mix mochiko, sugar, salt, and water in a bowl until smooth. Cook in the microwave for 2½ to 3½ minutes until glossy and stretchy.
  4. Cool the dough slightly on a well-starched surface before cutting into 8 equal pieces and flattening into circles.
  5. Place a strawberry on each circle of dough and wrap it securely, sealing at the top.
  6. Allow wrapped mochi to rest for 10 minutes before serving.
