  • 115 g unsalted butter
  • 135 g light brown sugar
  • 55 g granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 275 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp cornflour
  • 100 g milk chocolate chips
  • 100300 g mini eggs

Instructions

  1. Preheat your oven to 190ºC (or 170ºC fan) and line a 9×9 inch baking tin with parchment paper.
  2. In a mixing bowl, combine melted butter, light brown sugar, and granulated sugar until smooth.
  3. Add the egg and vanilla extract; mix well until blended.
  4. Incorporate the plain flour, cornflour, bicarbonate of soda, and salt into the mixture until just combined.
  5. Gently fold in the milk chocolate chips and most of the mini eggs.
  6. Transfer the dough to the prepared tin, pressing it down evenly. Decorate with remaining mini eggs on top.
  7. Bake for 18–22 minutes until the top is dry but still soft.
  8. Allow to cool before slicing into squares.
