  • 1 cup shredded coconut

  • 1 (16 ounce) key lime frosting tub

Instructions

  1. Preheat your oven to 350°F and spray the mini bundt pan with non-stick cooking spray.
  2. Prepare cake mixes according to package instructions, then divide batter into two bowls—13-1/3 cups in one and 13-1/4 cups in the other.
  3. In the first bowl, mix in shredded coconut and coconut extract; in the second bowl, stir in lime jello.
  4. Fill each bundt well with 1/3 cup of coconut batter followed by 1/4 cup of lime batter.
  5. Bake for about 22 minutes until a toothpick comes out clean; cool for 20 minutes before transferring to a wire rack.
