  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk
  • 1 cup unsalted butter (chilled)
  • 16 chocolate batons
  • 1 tbsp milk
  • Confectioners’ sugar (for dusting)

Instructions

  1. In a large mixing bowl, combine flour, sugar, salt, and instant yeast. Gradually add cold milk while mixing until a dough forms. Knead on a floured surface until smooth.
  2. Flatten chilled butter into a rectangle between parchment paper and refrigerate.
  3. Roll out dough into a rectangle; encase the butter by folding the dough over it. Roll out again and fold into thirds. Refrigerate for at least 30 minutes.
  4. Roll out chilled dough into triangles about 5 inches wide at base. Place one chocolate baton at the base of each triangle and roll tightly towards the tip.
  5. Preheat oven to 400°F (200°C). Place croissants on a lined baking sheet, brush with milk, and let rise for about 30 minutes.
  6. Bake for approximately 20 minutes until golden brown. Dust with confectioners’ sugar before serving.
