  • 8 oz gluten-free pasta
  • 4 cups low-sodium vegetable broth
  • 1 can fire-roasted tomatoes
  • 1 can artichoke hearts (drained)
  • 1 can black olives
  • 0.5 red onion (sliced)
  • 1 tsp fresh thyme
  • 1 tsp cumin
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Bring boiling water to a rolling boil in a large pot.
  2. Add gluten-free pasta and cook according to package instructions until al dente. Drain and set aside.
  3. In the same pot, add vegetable broth over medium heat. Stir in red onion, fire-roasted tomatoes, artichokes, olives, thyme, cumin, salt, and pepper.
  4. Heat through for about 5 minutes before adding the cooked pasta to the mixture until evenly coated.
  5. Remove from heat; mix in grated Parmesan cheese if desired and garnish with fresh basil before serving.
