  • 16 oz chocolate tea biscuits
  • 1 tbsp instant coffee
  • 1 cup boiling water
  • 6 tbsp unsalted butter, melted
  • 6 cups kataifi dough, shredded
  • 1 3/4 cups pistachio cream
  • 1 1/4 cups heavy cream
  • 1/4 cup powdered sugar
  • 3/4 cup dark chocolate chips
  • 3/4 cup hot heavy cream
  • 1 cup crushed pistachios

Instructions

  1. Prepare the biscuit base by combining boiling water with instant coffee. Briefly dip each biscuit in the mixture and layer them in a cake pan.
  2. Preheat oven to 350°F (175°C). Mix melted butter with shredded kataifi dough and layer it over the biscuit base.
  3. Whip heavy cream until soft peaks form, then gradually add powdered sugar. Fold in pistachio cream gently.
  4. Assemble the cake by pouring half the pistachio cream mixture over the kataifi layer; top with more biscuits if desired and finish with remaining cream.
  5. For the ganache, heat heavy cream until simmering, remove from heat, stir in dark chocolate chips until smooth, and pour over assembled cake.
