  • 4 to 5 tablespoons milk (for frosting)
  • 2 teaspoons lemon extract (for frosting)
  • 2 teaspoons lemon zest (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together cake flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until fluffy.
  4. Beat in eggs one at a time followed by vanilla extract, lemon juice, and zest.
  5. Gradually combine dry ingredients with wet mixture along with milk until smooth.
  6. Fill the muffin tin about two-thirds full with batter.
  7. Bake for about 20 minutes or until a toothpick inserted comes out clean.
  8. Cool the cupcakes before frosting with lemon buttercream made from powdered sugar, butter, milk, lemon extract, and zest.
