These classic lemon bars are a bright and tangy dessert featuring a buttery shortbread crust topped with a sweet and zesty lemon filling. The combination of a crisp base and a soft, slightly custardy lemon layer makes these bars a favorite for spring and summer gatherings, potlucks, or anytime you want a refreshing, citrusy treat. Dusted with powdered sugar, they are as beautiful as they are delicious.

Ingredients

For the Crust:
1 cup unsalted butter, softened
2 cups all-purpose flour
1/2 cup powdered sugar
1/4 teaspoon salt

For the Lemon Filling:
4 large eggs
1 1/2 cups granulated sugar
1/4 cup all-purpose flour
1/2 cup freshly squeezed lemon juice (about 2–3 lemons)
Zest of 2 lemons
Powdered sugar, for dusting

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper.
  • In a mixing bowl, cream together the butter, flour, powdered sugar, and salt until the mixture forms a crumbly dough. Press evenly into the prepared baking pan.
  • Bake the crust for 18–20 minutes, or until lightly golden. Remove from the oven and let cool slightly.
  • In a separate bowl, whisk together the eggs, granulated sugar, flour, lemon juice, and lemon zest until smooth.
  • Pour the lemon filling over the warm crust and return to the oven. Bake for an additional 20–25 minutes, or until the filling is set but still slightly jiggly in the center.
  • Allow the bars to cool completely at room temperature, then refrigerate for at least 1 hour before slicing.
  • Dust with powdered sugar before serving and cut into squares or rectangles.
