  1. 56 croissants, torn into pieces
    3 large eggs
    1 1/2 cups milk
    1/2 cup heavy cream
    1/2 cup granulated sugar
    1/4 cup brown sugar
    1/3 cup fresh lemon juice
    1 tablespoon lemon zest
    1 teaspoon vanilla extract
    Pinch of salt

Instructions

  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • Arrange the croissant pieces evenly in the dish.
  • In a bowl, whisk eggs, milk, cream, sugars, lemon juice, lemon zest, vanilla, and salt.
  • Pour the custard over the croissants, pressing gently to soak.
  • Let sit for 10–15 minutes to absorb the mixture.
  • Bake for 35–40 minutes until golden and set in the center.
