Ingredients

For the Chicken Marinade:
1 1/2 pounds boneless, skinless chicken breasts (or thighs)
3 tablespoons olive oil
2 tablespoons lemon juice
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon ground cumin
Salt and black pepper, to taste

For the Rice:
1 1/2 cups long-grain white rice
3 cups water or chicken broth
1 tablespoon olive oil
1/2 teaspoon salt

For the Bowl Toppings:
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/4 cup red onion, thinly sliced
1/4 cup Kalamata olives, sliced
1/4 cup crumbled feta cheese
2 tablespoons chopped fresh parsley

For the Garlic Sauce:
1/2 cup plain Greek yogurt
1 tablespoon lemon juice
1 small clove garlic, minced
1 tablespoon olive oil
Salt, to taste

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add the chicken and coat well. Marinate for at least 30 minutes, or up to 4 hours for deeper flavor.

  2. Rinse the rice under cold water until clear. In a pot, bring water or broth, olive oil, and salt to a boil. Add rice, reduce heat to low, cover, and simmer for 15–18 minutes until tender. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.

  3. Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for 5–7 minutes per side, or until fully cooked and golden brown. Internal temperature should reach 165°F (75°C). Let rest for 5 minutes, then slice.

  4. In a small bowl, whisk together Greek yogurt, lemon juice, garlic, olive oil, and salt to make the garlic sauce.

  5. Assemble the bowls by adding a base of rice, topping with sliced chicken, tomatoes, cucumber, red onion, olives, and feta cheese.

  6. Drizzle with garlic sauce and sprinkle with fresh parsley before serving.
