  • 2 bottles (750 ml) of 100-proof lemon juice
  • 4 cups sugar
  • 5 cups filtered water

Instructions

  1. Thoroughly wash the lemons and zest them using a zester or grater.
  2. In a large mixing bowl, combine the lemon zest with the 100-proof lemon juice, stirring well.
  3. Transfer this mixture into glass jars with lids, sealing tightly; let it infuse at room temperature for about 10 days, shaking gently every few days.
  4. Prepare a sugar mixture by heating sugar with water in a saucepan until dissolved; allow to cool completely.
  5. Strain the infused lemon mixture through a fine mesh strainer into another bowl and combine with the cooled sugar mixture.
  6. Pour into clean glass bottles, seal, and refrigerate for at least 24 hours before serving.
