  • 4 medium apples (e.g., Bramley or Gala)
  • 250 ml double cream
  • 200 ml whole milk
  • 150 g toffee sauce (store-bought or homemade)
  • 100 g brown sugar
  • 1 tsp cinnamon
  • 2 egg yolks

Instructions

  1. Peel, core, and chop the apples into small pieces. In a saucepan, combine chopped apples with brown sugar and cinnamon. Cook over medium heat until the apples soften, about 10-15 minutes.
  2. Remove from heat, cool slightly, then blend into a purée. Allow to cool completely.
  3. In another saucepan, heat double cream and whole milk until warm but not boiling. Whisk egg yolks in a separate bowl and slowly add warmed cream while whisking continuously.
  4. Remove from heat once thickened slightly, then stir in cooled apple purée and toffee sauce until well combined.
  5. Pour mixture into an ice cream maker and churn according to instructions until thickened. If no ice cream maker is available, freeze in a container, stirring every 30 minutes until set (about 4-6 hours).
  6. Serve in bowls or cones with extra toffee sauce if desired.
