  • 750 ml high-proof lemon juice (as an alternative to grain alcohol)
  • 4 cups water
  • 3 cups sugar

Instructions

  1. Prepare your lemons by washing them thoroughly and zesting the yellow part, avoiding the bitter white pith.
  2. Place the lemon zest into a large glass jar and add the high-proof lemon juice. Seal tightly and let it infuse in a cool dark spot for 7–30 days, shaking occasionally.
  3. In a saucepan, combine water and sugar over medium heat until dissolved, then let cool completely.
  4. Strain the infused lemon juice through a fine mesh strainer into another container to remove zest.
  5. Mix the cooled syrup with the strained lemon infusion until well combined.
  6. Pour into clean glass bottles and allow it to rest for at least one week before serving.
  7. For best results, chill in the freezer and serve ice cold.
