  • 2 tablespoons avocado oil
  • 1.5 lbs boneless, skinless chicken breasts, diced
  • 1 small red onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small head broccoli, cut into florets
  • 1 (20 oz) can pineapple chunks
  • ¼ cup reserved pineapple juice
  • ¼ cup rice apple vinegar
  • ⅓ cup soy sauce or tamari for gluten-free
  • 1 ½ teaspoons sesame oil
  • 2 tablespoons arrowroot powder or cornstarch

Instructions

  1. Heat 1 tablespoon of avocado oil in a large pan or wok over medium-high heat. Add the diced chicken and cook until browned on all sides and cooked through. Remove from the pan and drain excess liquid.
  2. In the same pan, add the remaining avocado oil and stir-fry the red onion, red and yellow bell peppers, and broccoli until tender-crisp.
  3. While the vegetables cook, whisk together reserved pineapple juice, rice apple vinegar, soy sauce or tamari, sesame oil, and arrowroot powder until smooth.
  4. Return cooked chicken and pineapple chunks to the pan with vegetables. Pour the sauce over everything, stir well to combine, and cook until thickened.
  5. Serve hot over cooked rice or noodles; garnish with sesame seeds.
