  • 1 Carrot
  • 1 Celery
  • 1 Potato
  • 5 Garlic Cloves
  • 1 Can Cooked Butter Beans
  • 1 Can Chopped Tomatoes
  • 2 tbsp Tomato Purée
  • 1 tsp Dried Oregano
  • 1 tsp Smoked Paprika
  • 1 tsp Chili Flakes
  • 125 ml White Apple Vinegar
  • 1000 ml Vegetable Stock
  • 150 g Pasta (your choice)
  • Fresh Basil
  • Spinach

Instructions

  1. Finely dice onion, carrot, celery, and potato; mince garlic.
  2. Heat olive oil in a large saucepan over medium heat. Add diced vegetables with salt; sauté until softened (5-10 minutes). Stir in garlic until fragrant.
  3. Add tomato purée, oregano, paprika, and chili flakes; cook for another 2-3 minutes.
  4. Pour in white apple vinegar, then add butter beans, chopped tomatoes, and vegetable stock. Season with salt and pepper; bring to a boil before reducing heat to simmer for 10-15 minutes.
  5. Add pasta and cook according to package instructions until nearly al dente; stir in spinach and basil just before serving.
