Ingredients

  • For the Chicken Marinade:
    1 1/2 pounds boneless, skinless chicken breasts
    2 tablespoons olive oil
    1 tablespoon honey
    1 tablespoon lime juice
    2 cloves garlic, minced
    1/2 teaspoon smoked paprika
    Salt and black pepper, to taste
  • For the Salad:
    4 cups mixed salad greens
    2 cups fresh pineapple slices
    1 cup cherry tomatoes, halved
    1 avocado, sliced
    1/4 cup red onion, thinly sliced
    1/4 cup toasted almonds or cashews
  • For the Dressing:
    3 tablespoons olive oil
    1 tablespoon lime juice
    1 teaspoon honey
    1/2 teaspoon Dijon mustard
    Salt and black pepper, to taste

Instructions

  • In a bowl, whisk together olive oil, honey, lime juice, garlic, smoked paprika, salt, and pepper. Add the chicken and coat well. Marinate for at least 20–30 minutes.

  • Preheat a grill or grill pan over medium-high heat. Lightly oil the grates.

  • Grill the pineapple slices for 2–3 minutes per side until caramelized and grill marks appear. Remove and set aside.

  • Grill the marinated chicken for 5–7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C). Let rest for 5 minutes, then slice.

  • In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper to make the dressing.

  • In a large serving bowl, arrange the mixed greens, grilled pineapple, sliced chicken, cherry tomatoes, avocado, red onion, and toasted nuts.

  • Drizzle with dressing just before serving and toss gently to combine.
