  • 1.5 cups orzo
  • 3 cups chicken stock (or vegetable stock)
  • 8 oz cherry tomatoes (red and yellow), sliced in half
  • 1/3 cup sun-dried tomatoes (in olive oil), chopped
  • 1/3 cup kalamata olives, sliced
  • 1/4 cup green olives, sliced
  • 6 oz feta cheese, crumbled or diced into small cubes
  • 3 tablespoons lemon juice (or lime juice), freshly squeezed
  • 3 tablespoons extra virgin olive oil
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon Italian seasoning
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. In a large high-sided skillet, combine orzo and chicken stock. Bring to a boil, then reduce heat to simmer and cover, cooking for about 10 minutes until orzo is tender.
  2. Stir in halved cherry tomatoes, chopped sun-dried tomatoes, sliced kalamata and green olives. Gently fold in feta cheese.
  3. Add lemon juice, olive oil, smoked paprika, Italian seasoning, salt, and pepper to taste; mix well.
  4. Reheat on low heat until warmed through while stirring constantly.
  5. Serve garnished with additional feta cheese and freshly chopped basil.
