  • 1/4 cup Greek yogurt
  • 1/4 cup almond flour
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground oregano
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1 small shallot, finely diced
  • 4 cloves garlic, finely minced
  • 1 tablespoon lemon zest
  • 12 tablespoons olive oil, for cooking the meatballs

Instructions

  1. In a mixing bowl, combine ground lamb, Greek yogurt, almond flour, chopped herbs, spices, diced shallot, minced garlic, lemon zest, salt, and black pepper. Mix until just combined.
  2. Using a cookie dough scoop or tablespoon, portion out the mixture and shape it into meatballs.
  3. Heat olive oil in a skillet over medium heat. Add meatballs in batches and cook for 4-5 minutes per side until browned and cooked through (160°F internal temperature).
  4. Serve warm with tzatziki sauce and fresh veggies.
