  • 5 butter croissants
  • 1/2 cup unsalted butter (room temperature)
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 cup almond flour
  • 2 tbsp flour (AP, plain)
  • 1 cup water
  • 1/2 cup granulated sugar (for simple syrup)
  • 10 tbsp sliced almonds
  • powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Prepare simple syrup by heating water and sugar in a saucepan until dissolved; let it cool.
  3. In a mixing bowl, beat the room-temperature butter and granulated sugar until creamy. Add eggs one at a time, mixing well.
  4. Gradually incorporate almond flour and plain flour until smooth. Transfer to a piping bag.
  5. Slice croissants in half horizontally and brush the insides with simple syrup.
  6. Fill each croissant with almond cream and sprinkle sliced almonds on top.
  7. Bake for 15–20 minutes or until golden brown.
  8. Allow to cool slightly before dusting with powdered sugar.
