  • 1 large egg
  • 1/2 cup unsalted sweet cream butter
  • 3 cups Easter sprinkles
  • 1/2 cup unsalted sweet cream butter (for frosting)
  • 2 1/2 cups powdered sugar
  • 2 tablespoons heavy whipping cream
  • Pink gel food coloring

Instructions

  1. Preheat your oven to 350°F and line two cookie sheets with parchment paper or silicone baking mats.
  2. In a stand mixer, combine the cake mix, egg, and butter until a soft dough forms.
  3. Mix in 1 cup of Easter sprinkles evenly throughout the dough.
  4. Scoop dough into balls using a small cookie scoop and roll each ball in the remaining sprinkles.
  5. Place dough balls on the prepared cookie sheets and bake for 10–12 minutes. Allow them to cool completely on wire racks.
  6. In the stand mixer, beat together softened butter, powdered sugar, heavy whipping cream, and pink gel food coloring until creamy.
  7. Assemble whoopie pies by piping frosting onto one cookie’s bottom half and gently pressing another cookie on top.
