  • 4 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tsp salt
  • 1 tbsp active dry yeast
  • 1 cup warm whole milk
  • 1 large egg
  • 1 cup + 2 tbsp cold unsalted butter
  • 7 oz cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • Zest of 1 lemon (optional)
  • Optional toppings: fruit preserves, fresh berries, sliced almonds

Instructions

  1. In a mixing bowl, combine flour, sugar, and salt. In another bowl, mix warm milk and yeast; let sit until foamy.
  2. Add the egg and yeast mixture to the dry ingredients; mix until combined. Knead for about 6–8 minutes until smooth. Chill in the refrigerator for 30 minutes.
  3. Shape cold butter between parchment paper into an 8-inch square and chill.
  4. Roll chilled dough into a square, place butter in the center, fold corners over it, roll into a rectangle, and fold into thirds. Chill for another 30 minutes; repeat rolling and folding two more times.
  5. Cut dough into squares, fill with cream cheese mixture, shape as desired, and let rise on baking sheets for about an hour.
  6. Preheat oven to 390°F (200°C). Brush danishes with egg wash or milk before baking for about 15–20 minutes until golden brown.
  7. Cool slightly before glazing with powdered sugar mixed with milk or lemon juice.
