  • 1 lb boneless chicken breast, thinly sliced
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 cup snap peas
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce (or tamari)
  • 1 tsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken with salt, pepper, and 1 tablespoon of soy sauce; set aside.
  2. Heat 1 tablespoon of vegetable oil in a wok over high heat. Cook the chicken until done (4–5 minutes). Remove and set aside.
  3. Add remaining oil to the wok. Sauté garlic and ginger for 30 seconds until fragrant.
  4. Stir in carrots and broccoli; cook for about 2 minutes until starting to soften.
  5. Add bell peppers and snap peas; continue cooking for another 2 minutes.
  6. Return chicken to the wok and add remaining soy sauce and sesame oil; mix well.
  7. Push ingredients aside, pour cornstarch mixture into the empty space and stir until thickened (about a minute).
  8. Combine everything thoroughly before serving hot over rice or noodles.
