  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 ripe avocados (cubed)
  • 1/3 cup cilantro (finely diced)
  • 1/4 cup red onion (diced)
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 2 cups cooked cilantro lime rice
  • 1 can black beans (drained and rinsed)
  • 1 1/2 cups corn
  • 1/2 cup plain Greek yogurt
  • 2 chipotle peppers in adobo
  • 12 tablespoons adobo sauce
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder

Instructions

  1. Marinate the chicken by whisking together lime juice, cilantro, olive oil, honey, paprika, garlic powder, salt, and pepper. Coat chicken thighs well and refrigerate for at least 30 minutes.
  2. Cook your cilantro lime rice if not pre-cooked; mix in fresh cilantro and lime juice.
  3. Prepare avocado salsa by combining cubed avocados, cilantro, red onion, lime juice, and salt in a bowl.
  4. Blend the chipotle sauce ingredients until smooth.
  5. Preheat oven or air fryer to 400°F. Cook marinated chicken for 20-25 minutes in the oven or 14-18 minutes in the air fryer until it reaches an internal temperature of 165°F.
  6. Let the chicken rest before slicing and assembling your bowls: start with rice, then layer black beans, corn, sliced chicken, avocado salsa, and drizzle with chipotle sauce.
