  • 2 Tbsp avocado oil
  • 1 cup diced boneless skinless chicken breasts
  • 1/2 cup diced yellow onion
  • 2 cloves garlic (minced)
  • 1 tsp minced fresh ginger
  • 1 cup fresh pineapple chunks
  • 3/4 cup frozen peas and carrots (thawed)
  • 3 cups cooked jasmine rice
  • 2 Tbsp reduced sodium soy sauce
  • 1 Tbsp plant-based oyster sauce
  • 1 tsp toasted sesame oil
  • Green onions for garnish

Instructions

  1. Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat.
  2. Add diced chicken to the skillet, season with salt and pepper, and cook until golden brown (about 5–7 minutes). Remove from skillet and set aside.
  3. In the same skillet, add another tablespoon of avocado oil. Sauté onion, garlic, and ginger until fragrant (about 2 minutes).
  4. Stir in pineapple chunks and thawed peas and carrots; cook for another 3–4 minutes until heated through.
  5. Add cooked jasmine rice along with soy sauce, plant-based oyster sauce, and toasted sesame oil; stir until well combined.
  6. Return the cooked chicken to the skillet, mix well, and garnish with diced green onions before serving hot.
