  • 8 oz farfalle pasta
  • 1 cup cherry tomatoes (halved)
  • 1 cup fresh mozzarella balls (halved)
  • 1/2 cup fresh basil leaves (thinly sliced)
  • 3 tbsp extra virgin olive oil
  • 1.5 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1 garlic clove (grated)
  • 1/4 tsp red pepper flakes
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F. Arrange turkey slices on a foiled baking sheet.
  2. Bake for 10-12 minutes until crispy; cool and chop.
  3. Cook farfalle pasta according to package instructions; drain and rinse under cool water.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, lemon juice, grated garlic, red pepper flakes, salt, and pepper.
  5. In a large bowl, combine cooked pasta with chopped turkey, cherry tomatoes, mozzarella balls, basil leaves, and vinaigrette; toss to combine.
