  • 2 large russet potatoes
  • 2 teaspoons canola oil
  • 1 teaspoon kosher salt
  • 2 tablespoons butter
  • ¼ cup heavy cream
  • 4 slices turkey bacon (cooked and crumbled)
  • ½ cup shredded cheddar cheese
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ½ teaspoon kosher salt
  • 4 large eggs
  • Salt and pepper to taste
  • Chives (minced)

Instructions

  1. Preheat oven to 350°F. Prick potatoes with a fork, coat with canola oil, and sprinkle with salt. Bake for about 1 hour until fork-tender.
  2. Once cooled, slice potatoes in half and scoop out most of the flesh into a mixing bowl.
  3. Add butter, heavy cream, crumbled turkey bacon (reserve some for topping), cheese, garlic powder, onion powder, black pepper, and salt to the bowl. Mix until smooth.
  4. Fill each potato skin with the mixture and create a well in the center for an egg.
  5. Crack an egg into each well; season with salt and pepper. Top with remaining turkey bacon.
  6. Bake for an additional 15-20 minutes until eggs are set.
