  • 1 lb boneless skinless chicken breast
  • 6 cups baby spinach
  • 1 pint blackberries
  • 2 kiwis, sliced
  • 1 avocado, sliced
  • 1/4 cup sliced red onion
  • 2 tablespoons crumbled feta cheese
  • 2 tablespoons chopped walnuts
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon dry basil leaves
  • 1/2 teaspoon garlic powder
  • salt & pepper to taste
  • 1 tablespoon avocado oil

Instructions

  1. Season chicken with garlic powder, basil, black pepper, and salt.
  2. Heat avocado oil in a skillet over medium-high heat; cook chicken for 4-6 minutes on each side until cooked through. Let rest before slicing.
  3. In a bowl, whisk together the dressing ingredients until well combined.
  4. In a large bowl, layer baby spinach, followed by blackberries, kiwi slices, red onion, avocado, feta cheese, walnuts, and sliced chicken.
  5. Serve immediately with dressing on the side.
