  • 2 tbsp olive oil or sesame oil
  • 2 cloves garlic, minced
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper, diced
  • 1/4 cup green onions, chopped

Instructions

  1. Heat oil in a large pan over medium heat. Add chicken pieces and cook for 6 to 8 minutes until golden brown. Remove chicken from the pan and set aside.
  2. In the same pan, add garlic and cook for about 30 seconds. Stir in soy sauce, pineapple juice, honey (or brown sugar), and vinegar; simmer for 2 minutes.
  3. Whisk cornstarch with water until smooth; add to the sauce to thicken.
  4. Return chicken to the pan along with pineapple chunks and red bell pepper; cook for another 3 to 4 minutes.
  5. Stir in cooked rice until heated through; adjust seasoning as needed.
