  • 1 1/2 cups sugar
  • 2 large eggs (at room temperature)
  • 1 tablespoon vanilla extract
  • 1 1/4 cups sour cream (not nonfat) (at room temperature)
  • 1/4 cup reserved batter (from cake mixture)
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F and prepare a nonstick angel food cake pan with cooking spray.
  2. In a food processor, pulse walnuts until coarse. Combine with flour, brown sugar, and cinnamon to create the streusel topping; chill.
  3. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Beat softened butter and sugar until fluffy; add eggs one at a time, then stir in vanilla and mashed bananas.
  5. Gradually mix in dry ingredients alternating with sour cream; fold in optional chocolate chips and walnuts.
