  • 2 medium-sized zucchinis
  • 1 cup shredded cheese (any variety)
  • 1/2 cup almond flour or coconut flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (mozzarella recommended)
  • Herbs or spices of choice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash, dry, and grate the zucchinis until you have about 3 cups. Squeeze out excess moisture using a towel.
  3. In a mixing bowl, combine the squeezed zucchini with shredded cheese, almond or coconut flour, eggs, garlic powder, onion powder, salt, and pepper.
  4. Line a baking sheet with parchment paper and spread the zucchini mixture evenly to form a rectangle about ½ inch thick.
  5. Bake for 20-25 minutes until golden brown.
  6. Let cool slightly, sprinkle additional cheese on half of the crust, fold over, and bake for another 10-15 minutes until melted.
  7. Cut into squares and serve warm.
