  • 1/2 cup granulated sugar

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1/4 cup cocoa powder
  • 1 tablespoon milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. Beat egg whites until soft peaks form, gradually adding half the sugar until stiff peaks form.
  3. In another bowl, beat egg yolks with remaining sugar until pale; stir in vanilla. Sift in flour, cocoa powder, baking powder, and salt, then fold in egg whites.
  4. Spread batter evenly and bake for 10–12 minutes. Roll the warm cake in a towel dusted with powdered sugar and cool completely.
  5. For the filling, whip heavy cream with powdered sugar and vanilla until stiff peaks form. Unroll the cooled cake, spread filling evenly, and reroll tightly.
  6. For frosting, beat softened butter with powdered sugar and cocoa until fluffy; frost the cake as desired.
