  • 3 medium potatoes, diced

  • 2 cups green beans, trimmed and cut into 1-inch pieces
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Brown the beef chunks in batches; set aside.
  3. Sauté onions and garlic until translucent.
  4. Add carrots and potatoes; cook for 5 minutes.
  5. Return beef to the pot; pour in beef broth and add tomato paste, thyme, rosemary, salt, and pepper.
  6. Simmer covered for 1.5 hours after bringing to a boil.
  7. Add green beans; simmer for an additional 30 minutes until everything is tender.
  8. Adjust seasoning before serving and garnish with fresh parsley.
