  • 300 g watermelon juice (blended from watermelon)
  • 230 g glutinous rice flour
  • 65 g cornstarch
  • 40 g sugar
  • 30 g plant-based butter
  • Cooked glutinous rice flour (for dusting)

Instructions

  1. Prepare the Watermelon Juice: Cut the watermelon into chunks and blend until smooth. Strain if desired.
  2. Make the Mochi Dough: In a mixing bowl, combine glutinous rice flour, cornstarch, and sugar. Gradually mix in the watermelon juice and melted butter until smooth.
  3. Steam the Mochi: Pour the mixture into a heatproof dish lined with parchment paper. Steam for 20-25 minutes until translucent.
  4. Shape the Mochi: Let it cool slightly, dust your surface with cooked glutinous rice flour, then cut into pieces or mold.
  5. Serve & Enjoy: Cool completely before serving, or refrigerate for an extra refreshing treat.
