  • 1/2 cup rice flour
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 cup cold water
  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped (optional)
  • 12 small red chilies, finely chopped (optional)
  • Vegetable oil for frying
  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 tablespoons lime juice, freshly squeezed
  • 1/4 cup warm water
  • 1 garlic clove, minced
  • 12 small red chilies, finely chopped (optional)
  • 1 tablespoon rice vinegar (optional for extra tang)

Instructions

  1. In a mixing bowl, combine the rice flour, all-purpose flour, baking powder, salt, and black pepper.
  2. In another bowl, whisk together the cold water and egg until well combined.
  3. Slowly add the wet ingredients to the dry ingredients while stirring until smooth.
  4. Fold in the chopped shrimp, green onions, cilantro, mint leaves (if using), and red chilies (if using). Mix until all ingredients are evenly coated with batter.
  5. In a frying pan, add vegetable oil to cover the bottom about ½ inch deep and heat on medium-high until hot but not smoking.
  6. Spoon dollops of batter into the hot oil and fry for about 3-4 minutes on each side until golden brown. Use a slotted spoon to remove fritters from oil once cooked.
  7. In a small bowl, mix fish sauce, sugar, lime juice, warm water, minced garlic, and red chilies (if using). Stir until sugar dissolves completely.
  8. Arrange fritters on a serving plate alongside dipping sauce for an irresistible treat!
