  • 1 tbsp oil
  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (or 1/2 small celery root, diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 4 cups vegetable broth
  • 1/3 cup dairy-free cream
  • Fresh parsley (for garnish)

Instructions

  1. In a large pot, heat oil over medium heat. Sauté diced onion for about 3 minutes until translucent.
  2. Add minced garlic, diced celery, carrots, potatoes, and spices. Sauté for another minute.
  3. Pour in vegetable broth and bay leaves if using. Bring to a boil then reduce heat to simmer for about 20 minutes or until vegetables are tender.
  4. Carefully blend half of the soup until smooth using an immersion blender or regular blender.
  5. Return blended soup to the pot, stir in dairy-free cream, taste and adjust seasonings as needed. Serve hot garnished with fresh parsley.
