  • 2 lbs flank steak (cut into 4 pieces)
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/4 cup fresh lime juice (about 2 limes)
  • 6 tablespoons neutral oil (divided)
  • 4 cloves garlic (minced)
  • 1 tablespoon complete seasoning
  • Salt and pepper to taste
  • 1 medium white onion (thinly sliced)

Instructions

  1. Boil the Flank Steak: In a Dutch oven, combine the flank steak, bay leaves, salt, and enough water to cover the meat. Bring to a boil, then reduce heat to medium-low and simmer until tender (1 to 1.5 hours). If using a pressure cooker, cook for about 30-40 minutes.
  2. Shred the Meat: Remove the cooked flank steak from the pot and shred using two forks.
  3. Marinate: In a mixing bowl, combine shredded beef with lime juice, 2 tablespoons of oil, minced garlic, complete seasoning, and additional salt and pepper. Let marinate for 30 minutes at room temperature.
  4. Pan-Fry: Heat remaining oil in a skillet over medium heat. Add marinated beef in batches if needed for even cooking. Fry one side for about 5 minutes until crispy before flipping and frying for another 4 minutes.
  5. Sauté Onions: Lower heat and add sliced onions to the skillet; sauté until softened (about 4-5 minutes).
