  • 1/2 cup diced onion
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons tomato paste
  • 2 15 oz canned chickpeas (drained and rinsed)
  • 34 cups low sodium vegetable broth
  • 1/3 cup chopped sun-dried tomatoes in oil
  • Juice of 1/2 lemon
  • 1 cup full-fat coconut milk
  • 23 cups fresh spinach
  • Salt and black pepper to taste
  • Fresh basil leaves (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion until translucent (3-4 minutes), then add minced garlic, oregano, and red pepper flakes; cook for another 1-2 minutes.
  2. Stir in drained chickpeas and tomato paste. Add vegetable broth, bring to a boil, then reduce heat to low and simmer covered for 15 minutes.
  3. Blend half of the soup using an immersion blender until smooth.
  4. Stir in sun-dried tomatoes, lemon juice, coconut milk, and spinach; simmer for an additional 5-10 minutes. Adjust seasoning with salt and black pepper.
  5. Serve hot, garnished with fresh basil leaves.
