  • 900g boneless skinless chicken thighs
  • 120g creamy peanut butter
  • 240ml unsweetened full-fat coconut milk
  • 2 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 1½ tablespoons packed dark brown sugar
  • 1 teaspoon ground ginger
  • 1 tablespoon minced garlic
  • ½ teaspoon crushed red pepper flakes

Instructions

  1. In a bowl, whisk together peanut butter, coconut milk, lime juice, soy sauce, brown sugar, ginger, garlic, and red pepper flakes until smooth.
  2. Reserve some sauce for serving. Marinate chicken in the remaining sauce for 1-8 hours in the refrigerator.
  3. Preheat the broiler or grill. Cook chicken under the broiler or on the grill for about 12 minutes until fully cooked (internal temperature should reach 71°C).
  4. Serve with reserved sauce over rice and garnish with lime wedges and herbs.
