  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1 cup creamy peanut butter
  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Chopped green onions and crushed peanuts for garnish

Instructions

  1. Trim excess fat from the chicken and cut into bite-sized pieces.
  2. In a mixing bowl, whisk together the peanut butter, coconut milk, soy sauce, honey, rice vinegar, ginger, garlic, and red pepper flakes until smooth.
  3. Place the chicken at the bottom of the slow cooker and pour the peanut sauce over it.
  4. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours until tender (165°F internal temperature).
  5. Shred the chicken using two forks and mix well with the sauce.
  6. Serve over steamed rice or noodles, garnished with green onions and crushed peanuts.
