  • 3/4 cup grated carrots
  • 1/2 cup thinly sliced celery

  • 4 cups chicken broth
  • 2 cups half-and-half, warmed
  • 1 pound gnocchi
  • 2 cups cooked rotisserie chicken breast, shredded
  • 2 cups fresh spinach, roughly chopped
  • 12 teaspoons fresh thyme leaves, chopped
  • 1/2 teaspoon dried Italian herb blend
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large pot or Dutch oven, heat the butter and olive oil over medium heat. Sauté onions until translucent (3-5 minutes). Add carrots and celery; cook for an additional 3-4 minutes.
