3 tablespoons unsalted butter
1 tablespoon extra virgin olive oil
1 cup diced yellow onion
3/4 cup grated carrots
1/2 cup thinly sliced celery
2 large garlic cloves, minced
4 cups chicken broth
2 cups half-and-half, warmed
1 pound gnocchi
2 cups cooked rotisserie chicken breast, shredded
2 cups fresh spinach, roughly chopped
1–2 teaspoons fresh thyme leaves, chopped
1/2 teaspoon dried Italian herb blend
Salt and freshly ground black pepper to taste
Instructions
In a large pot or Dutch oven, heat the butter and olive oil over medium heat. Sauté onions until translucent (3-5 minutes). Add carrots and celery; cook for an additional 3-4 minutes.
Stir in minced garlic and sauté until fragrant (about 1 minute). Add chicken broth while stirring continuously to prevent lumps.
Bring to a gentle simmer; whisk in warmed half-and-half along with thyme and Italian herbs. Season with salt and pepper.
Add gnocchi according to package instructions (about 3-5 minutes) until they float. Stir in shredded chicken and spinach until heated through.
